MCIT 2

This is the second installment of misadventures of a chef in training!

Eggplant Sandwiches!

This was actually super easy. I am going to break it down for you guys in different segments which will hopefully make it easier to read and understand. Also, I will make sure to put the cooking times in this time...duh!

Ingredients:
Olive Oil
1/4 cup Mayo
2 Garlic Cloves minced
Eggplant
Tomatoes
Fresh Basil
Hoagie Roll
Mozzarella Cheese

Steps:
-Preheat oven to broiler
-Peel your eggplant, cut off the ends, slice length wise and then slice it in 1/2 inch slices
-Brush your eggplant slices with olive oil
-Place sliced eggplant in oven, 6 inches from the broiler, then broiler for 3 minutes
-Cut hoagie roll in half length wise and pop in the toaster oven until toasty
-While eggplant in in the oven and the hoagie roll is in the toaster, mix the minced garlic and mayo together in a small bowl and set aside
-Slice your tomatoes
-Chop your basil leaves
-Once your eggplant is finished cooking, turn off the oven, sprinkle mozzarella cheese on cooked eggplant and place back in off oven so it melts
-When the bread is toasted, put the mayo mixture on the top half of the bread, then layer your eggplant, tomatoes and fresh basil
-Eat it rather immediately because eggplant is very moist and can make your bread soggy if it just sits there

Yum! I love eggplant and want to start cooking it. We did it at the cooking class and it was so so yummy. not sure I can remember all of their tips though!!

That sounds yummy, but it so wouldn't fly in my house because all the people I cook for believe in having at least one meat item with their good. Argh.

that looks...DELICIOUS! I soo miss food like that! my hubby has the most boring taste buds and veggies like eggplant?! no way! So..I don't cook it but I miss eating it! :) So glad to have found your blog! Thanks for entering my giveaway & I look fwd to reading more of your posts.
